Crumbed Zucchini Fries

  • 2 small zucchini
  • 1 egg
  • 1/4 cup Almond and Coconut Milk
  • 1/4 cup Oat Flour (blitz regular oats in food processor or blender)
  • 1 tbsp Parmesan Cheese
  • Salt and Pepper to taste
  • Cooking Spray Oi


  1. Preheat oven to 200°C
  2. Line a baking tray with baking paper
  3. Slice Zucchini into “fries”
  4. Combine milk and egg into a small bowl
  5. In another bowl combine parmesan, oat flour and salt and pepper
  6. Soak the fries in the egg mixture
  7. Roll in dry mixture until fully covered
  8. Place the crumbed zucchini on the baking tray
  9. Spray lightly with your preferred oil (I use olive)
  10. Bake for 20 minutes or until golden brown


Serve up with your favourite meat dish and a side salad. Perfect for the entire family. My kids love them!!
